German Chocolate Birthday Cake

Yumm! Is your mouth watering? Well, mine was and yes, before you ask, it was delicious! My husband loves german chocolate cake, so every year for his birthday, I make him one. Sometimes from a box, other years I make the cake and the frosting from scratch. It's a long labor of love, but ohhhhh so worth it!
Duncan Hines to the rescue this year along with the pecan coconut frosting in a container. While it wasn't as decadent as a homemade one would be, it was very moist, delicious and everyone enjoyed it! I think german chocolate cake is kinda of mild and delicate. It's not a super sweet cake, that is what the frosting is for!
Just follow along with the box instructions. I wanted my cakes to come out perfectly, so I took two 9" round cake pans and sprayed them with non-stick cooking spray and then I cut out two 9" round disks of wax paper and laid them in the bottom of the pan. The spray was almost like an adhesive, so my wax paper stayed still. I mixed up the batter and eye-balled putting half in each pan. The next trick is to let them sit. While I was preheating my oven to 350, I sat the cake batter pans by the stove. They seem to settle and bubble a little. The active yeast in the batter was working. That's a good sign. I waited another 10 minutes AFTER my oven came to desired temperature. Then I cooked them the required time (28 minutes was perfect for me).
After the timer went off, I laid them to cool on my stove top. It is a gas burner cook top, so the cake pans were elevated to cool underneath. After cooling, I turned the cake upside down and it popped right out! AWESOME! I peeled the wax paper off the bottom and flipped it over on my cake stand. I then frosted ONLY the top of the cake and did the same thing for the next layer. I thought about cutting the cakes in half, horizontally, and having a four layer cake, but I didn't have time to cool the cakes in the refrigerator. The colder they are, the firmer the cake is. In my experience this cake is too delicate and fell apart the last time I tried. One can of frosting did both the tops of each cake. I don't frost the sides of this type of cake with pecan coconut frosting from a can as it would just slide off and puddle on the bottom.
There have been years, I made the cake from a box and made the frosting homemade. That is always delicious too. Well Happy Birthday to all those February birthdays out there!
