Easy Banana Bread

My youngest had a school project, he had to find a recipe and double it and then triple it. The math teacher wanted the kids to work on fractions. Then he had to make one of the recipes and take it into school. He choose to make Banana bread is an EASY and delicious.
Ok - So here are the ingredients. Simple enough, plus they are most likely in your pantry, no special grocery trips!

Here is my guy making the "sour milk", the substitute for buttermilk. He said that it smelled disgusting! He didn't like that part. (But it makes it taste soooooo good!)

Next came the creaming of the butter and sugar. Then his favorite part came....cracking the eggs!

Then when I showed him the shifter....he was like What?!! Is that Mom! Once he got the hang of it, it was pretty cool.

Ok, mashing the bananas is next. Leave some chunks, it tastes yummy in the bread. If you have ripe bananas, mash them early and leave out, they will continue to brown. The browner the banana the sweeter the bread will be.

Then the final step is to add everything together and pour it into either one large pre-pared loaf pan, or two smaller ones.

Look at him, he's so proud of himself! I was proud of myself for only taking pictures and NOT taking over! It's hard to watch sometimes.

Look at that scrumptious banana bread! Do you see those chunks of banana in it? Delicious! It's a versatile recipe, I think it could be good if you added chocolate chips or cinnamon to the batter....ohhh that would be so yum! But you know, it really rocks just by itself!

Mrs. Mary's Banana Bread Recipe
1 stick of butter,
1 1/2 cups of sugar
2 Eggs
3-4 banana, mashed
4 TBSP Sour Milk or Buttermilk
1 3/4 cups flour
1 tsp baking soda
1 cup of nuts (walnut, pecan, whatever you like)
Preheat oven to 375 degrees.
*to make sour milk, combine 2 Tbsp of milk and 2 Tbsp of vinegar and let sour for 5 minutes.
In a bowl cream the butter and sugar together, add eggs one at a time. In a separate bowl sift flour, soda and add in sour milk (or buttermilk). Starting with the flour mixture, add in butter, sugar mixture until just incorporated. Lastly, add mashed bananas (nuts too if you are adding them).
Pour into one big loaf pan that has been lightly sprayed with cooking spray. Or two smaller loaf pans. Cook for one hour or longer, until a toothpick inserted into the center comes out clean.
