Soft Gingerbread Cookies

Do you love Gingerbread cookies? Well, my family does. My youngest son loves the cream cheese icing and the little red hots I put on top! So delicious. Spicy, warm and filling! It's a MUST for the holiday season and even after! He will ask me to make them throughout the year because he loves that kick that ginger gives when you bite into these little yummies.
Recipe makes about 3 dozen.
2 1/4 cup flour
2 teaspoons ground ginger
1 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoons of ground cloves
1/4 teaspoons salt
3/4 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/4 cup of molasses
Directions:
Sift all dry ingredients together (flour, ginger, soda, cinnamon, cloves, salt).
Cream the butter and sugars.
Add egg and beat until fully incorporated.
Add the molasses (I used dark black strap).
Add in the dry ingredients in small batches until just combined.
Refrigerate for 2-3 hours (I kept mine in the refrigerator overnight).
Preheat the oven to 350 degrees.
Roll about 2 tablespoon balls, and flatten slightly.
Bake for 9-11 minutes.
Decorate with cream cheese icing and red hots!
